Groovy Grilled Pizza Recipe

Fire up the grill – this is the Groovy Grilled Pizza Recipe! Making homemade pizza on the grill doesn't require any special equipment or tools! The secret is grilling with the 2-zone method, using both direct & indirect heat to create pizzas with gooey-melty cheese, smoky flavor, & a crisp, golden brown crust that ain’t burnt on the bottom.

Homemade pizza is one of my family’s favorite meals. Because it’s pretty quick to throw together using whatever you have on hand or specialty ingredients if you wanna get creative. But doing it on the grill was a new adventure for me. It turned out great and the recipe is good for weeknights, weekends, & backyard grooves.

INGREDIENTS

  • Any ready to bake pizza crust

  • Olive Oil

  • Sauce for your base (I used pizza sauce and BBQ sauce for two different types of Pizzas)

  • Toppings of Your choice:

    • Kid Friendly Groove: pizza sauce, pepperoni and shredded cheese.

    • BBQ Groove: Sweet Baby Ray’s BBQ Sauce, grilled chicken thighs, and shredded cheese. (Build your pizza your way. It’s your groove!)

  • For serving, as desired: grated Parmesan, crushed red pepper flakes, etc.

Step 1 - Preheat the grill

Prepare your grill for indirect cooking, creating a zone of direct high heat & a second zone of indirect heat. If using a gas grill, begin preheating at least 15 minutes before grilling. If using charcoal, light the charcoal at least 30 minutes prior to grilling.

Step 2 - Assemble the pizza

It’s helpful to assemble the pizza on a cutting board, or something similar, so you can transfer to the grill with ease. Lightly brush the top side of the par-crust with olive oil, then flip the crust such that the grilled side is facing up. Assemble your pizza, placing sauce, cheese, & toppings of choice on the top side. I did not measure sauce, cheese, or toppings. Just remember, when it comes to pizza, it’s important not to go overboard with toppings because otherwise the pizza won’t cook properly.

Step 3 - Grill the pizza

Working 1 pizza at a time, transfer the pizzas to the indirect heat side of the grill. Close the lid & grill 7-9 minutes. Once the cheese is melted and the edges are golden brown, move to the direct side for a few seconds to finish with nice grill marks. Carefully remove from the grill. Slice, serve immediately, and keep grooving!
